
American hash + Fried eggs

- 1 medium potato
- 1 medium sweet potato
- 1/2 red bell pepper
- 1/2 green bell pepper
- 1/4 - 1/2 onion chopped
- A pinch of Salt, pepper, garlic, paprika & nutritional yeast (add to taste)
- 1-2 tablespoons avocado oil (higher heating temp)
- 2 eggs (free range organic)
- Heat pan on medium-low heat with 1/2 tablespoon of avocado oil
- Add in chopped potatoes first (cook for 5-10 minutes)
- Add in sweet potato (cook for 5-10minutes)
- Season with a pinch of salt, paprika & garlic
- Add in bell pepper & onions
- Drizzle with avocado oil & season again
- Let cook until potatoes are soft & crispy
- Add additional oil (1/4 tablespoon towards the end to get crispier potatoes I use two spoons to portion out each pattie
- Plate the potatoes
- Using the same pan add in the eggs
- Cook 3-6 minutes depending on desired firmness (cover if desired - will cook more evenly)
- Add salt & pepper to taste
*You can boil the potato & sweet potato to soften the potatoes & reduce the cook time in the pan.
