American hash + Fried eggs

Prep time 20 minutes
Cook time 30-40 minutes
Total 60 minutes
Ingredients:
  • 1 medium potato
  • 1 medium sweet potato
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/4 - 1/2 onion chopped
  • A pinch of Salt, pepper, garlic, paprika & nutritional yeast (add to taste)
  • 1-2 tablespoons avocado oil (higher heating temp)
  • 2 eggs (free range organic)
Preparation/Cooking
  1. Heat pan on medium-low heat with 1/2 tablespoon of avocado oil
  2. Add in chopped potatoes first (cook for 5-10 minutes)
  3. Add in sweet potato (cook for 5-10minutes)
  4. Season with a pinch of salt, paprika & garlic
  5. Add in bell pepper & onions
  6. Drizzle with avocado oil & season again
  7. Let cook until potatoes are soft & crispy
  8. Add additional oil (1/4 tablespoon towards the end to get crispier potatoes
  9. I use two spoons to portion out each pattie
  10. Plate the potatoes
  11. Using the same pan add in the eggs
  12. Cook 3-6 minutes depending on desired firmness (cover if desired - will cook more evenly)
  13. Add salt & pepper to taste

*You can boil the potato & sweet potato to soften the potatoes & reduce the cook time in the pan.
